CHICKEN CRANBERRY QUESADILLAS
2 large restaurant style flour tortillas
1 cooked chopped boneless chicken breast
4 oz cheddar cheese
1 tablespoon of chopped scallions
¼ cup chopped green peppers
2 tablespoons of
cranberry salsa
Heat a large frying pan with butter or cooking spray. Put one flour tortilla into the pan. On top of the tortilla, place the remaining ingredients. Put the other tortilla on top of the mixture. Brown one side and then flip carefully to brown the other side. Place another frying pan on top of the tortillas as they are browning to keep the ingredients flat while cooking. After the tortillas are done, slice in four triangles.
